The ambition of the Burgunduans is to gain the UNESCO classification for their climates

Better than terroir, there's the "climate". The whole of Burgundy is hoping for this international recognition.

It's the entire Burgundy wine profession which will be honoured during the Saint Vincent 2012, the 28th and 29th of January, under the thousand year old banner of the "climates". For four years, the Burgundians have been preparing the application for their climates on the UNSECO World Hertiage list. At the origin of this adventure, there are world renowned wines, an exceptional heritage and know-how, a continuous and unique culture recognised for centuries.

With the climate, a combination of man and nature, the genius of the place and mankind is accomplished over a very long historical period. Thre has been such success that Burgundy is considered throughout the world as a model for "terroir" viticulture, its birthplace and archetype.

This Burgundian climate viticulture has given brith to a culture and an economy. It has produced, and continues to do so, amazing wines but also remarkable landscapes. This is the mozaic of the climates, and an architectural heritage, that of the vineyards and the villages, tha of Beaune, Nuits-Saint-Georges and Dijon, with a strong link joining everything : limestone. A rock which is the foundation of the climates, but is also extracted to build the stone walls, the "cabottes", churches, monuments and cellars... It is used to build the towns as well, essential elements in the construction of the climates, at the heart of the activity and the cultural, gastronomic and economic history, home to research laboritories and chair to legislators.

And so, there are three emblematic places of the Burgundy landscape that the Saint Vincent offers the visitor :

  • Dijon, Capital of Burgundy,
  • Nuits-Saint-Georges, at the heart of the prestigious wines of the Côte d'Or,
  • Beaune, Capital of Burgundy wine.

With this unusal Saint Vincent, Burgundy rediscovers with the climates its identity and the innovation that characterizes the region.

Pourquoi Saint Vincent est-il le patron des vignerons ? Né en Espagne, saint Vincent était diacre de Saragosse au début du IVe siècle. Il fut martyrisé par ordre du préfet Dacien à Valence et mourut sous les tortures le 22 janvier 304. Si l'élection de saint Vincent par les vignerons reste mystérieuse, voici quelques hypothèses… Elle pourrait n'être simplement due qu'à la première syllabe de son nom "vin". Le mystère de Saint Vincent : La date de la saint Vincent, le 22 janvier, correspond généralement à une période climatique de transition entre l'état d'hibernation de la vigne et celle du retour de la végétation ("à la saint Vincent, l'hiver s'en va ou se reprend") et surtout, autrefois, au début de la taille. On peut aussi interpréter "Vincent" comme "Vin Sang", le sang de la vigne.
